CHICKEN RICE CASSEROLE
2 cups cooked long grain rice
3 cups cooked diced chicken breast
2 cups celery (cut moon shaped) sauté
1/3 cup diced onion
1 can sliced water chestnuts (cut in half)
3 Tbsp lemon juice
1 cup Mayonnaise
1 can Healthy Request cream of chicken soup
4.5 oz sliced mushrooms
1/2 tsp pepper
Mix together and put in greased 9 x 13 glass pan
Top with 1 1/2 cup crushed corn flakes and 4 Tbsp melted butter.
Bake 45-60- minutes at 350 degrees
POPPY SEED DRESSING
½ cup oil
¼ cup lemon juice
2 T. Dijon mustard
1/3 cup sugar
1 teaspoon poppy seeds
¼ cup fresh minced onion OR 1 T. dried onion
Mix all ingredients together. Delicious on romaine lettuce with craisins and sliced almonds.
Pumpkin Pie Dessert
1 yellow cake mix minus 1 cup
1/2 cup melted margarine
1 egg
Mix together.
Spread in 9x 13 pan.
2/3 cup evaporated milk
2 eggs
½ tsp. salt
16 oz can pumpkin
3/4 cup sugar
1 ½ tsp pumpkin pie spice
1 tsp cinnamon
Mix together.
Pour over first mixture.
Mix the 1 cup cake mix with ¼ cup sugar,
1 tsp cinnamon
¼ cup of melted margarine
Sprinkle on top
Sprinkle on ½ cup chopped walnuts
Bake for 40 minutes at 350.
